On Eggs
Ok, this is not ‘the truth’ about hard boiled eggs.
It’s ‘a’ truth about hard boiled eggs.
It’s not very comprehensive either.
Peeling is a breeze, same day or a week later (refrigerated).
This works for me. Every time. How do I know? Mrsdm told me to tell you that “Mrsdm would not accept improperly cooked hard boiled eggs.” That’s how.
Start with about an inch of water
Put in the steamer basket, turn the burner on high to boil the water
Now the water’s boiling
Put in the eggs and cover the pot
(you can turn down the heat to just maintain the boil)
Time 12 minutes
When the timer goes off, turn off the burner and run the eggs in the pot under cold water for a minute or two.
Put the eggs in a bowl and refrigerate.
Ta da.
some notes and tips:
While you’re working it out, use 1 or 2 eggs at a time.
If it doesnt come out to your liking, still edible.
You’ll see you can adjust the timing by a minute or so either way…
7 minutes in the steamer basket gets you soft boiled (more or less).
soft boiled eggs are more tricky because of what people mean by ‘soft’.
Instead of running water over the pot you can set up an ice bath to put the eggs in. I’ve found it just doesn’t matter that much.
here’s another way that works every time for soft, medium or hard):
(no steamer basket)
1 layer of eggs in a pot.
add water to cover the eggs by an inch
Boil the water
As soon as it boils, remove the pot from the heat (turn it off)
Cover the pot
Wait:
Soft 5 minutes
Medium 7-8
Hard 10 or more
cold water rinse
(again adjust up/down to your liking)
with this method, some people leave the pot on the stove boiling for a minute or two, up to 5. I found that makes it way too complicated.
a third way for hard boiled (yep, it works every time too):
Put eggs in a heavy sauce pan
Cover with water + an inch
Bring to a full boil, uncovered
Turn off stove
Cover and leave the pot on the cooling burner.
Let it sit for a half hour or longer. since it’s cooling, it doesnt matter if you forget they’re there.
