Since we are doing cats, I thought you would like to see the cats of a friend of mine. These are Singapura cats. The darker one has a closer cross to Burmese. The Singapuras are getting so inbred that they are starting to have health issues. The two younger ones are a generation further away from the outcross to Burmese.

So…my first try at making borscht and I went with a green borscht because we have a couple of large bunches of sorrel growing in front of our house. It did not suck. Our friend’s daughter - who is never complimentary - said it was her third favorite soup of 2023 and asked for a second bowl. She ate that too then came back and said it was the second best soup she’d had in 2023.

So there was a knock on the door a few minutes ago - at 10:10pm…sent the dogs on a tear. I got up and ran to the front door before remembering I’m butt-nekkid and looked out the top of the window to see my gardener and his son. I shouted, “Uno minuto!” and ran back to find a pair of pants to pull on as I realized this was the Xmas tamale delivery…I opened the door, the dogs stopped barking and ran out to hug Manuel and his son, and I took the bag with the container of still hot and fragrant tamales, called the dogs back in, and came back to bed. Tamales for Xmas breakfast. Life is good.

Also, I need to remember to keep a pair of shorts by the bed. The only person running around naked on Xmas eve should be Mrs Clause.

Just taking a moment to relax and enjoy my coffee in between last night’s dinner for 12 adults and 3 small children. I spent all day preparing, we all barely fit around the table, the kids were bouncing off the walls, and the adults without small kids in tow stayed late enough that we didn’t get everything cleaned up before we gave up and went to bed. Yesterday at this time, I could hear snoring nearby. I can’t always tell where a noise is coming from in this building. It was interesting hearing wires going down and up in pipes in the walls while this side was being rewired. I thought the snoring was directly above me. There are a lot of people in that apartment, and I thought maybe one more was bedded down in the living room.

That’s right on the other side of the wall of my living room. It was cold that night. The doors on this building don’t lock. The upstairs tenants were fine with using the back stairs.

I have mentioned that my girlfriend and I first started dating when I was 16 and she was 14. I 1981 her folks went to London to teach for the University’s Foreign exchange program and, naturally, she went with them. Quite the hard long distance romance for two teens in 1981! No long distance phone calls for low cost then!

But with my father’s help, I managed to get a little … something… sent to her. Her mother still gets worked up about it ;) I was amused this morning when Holly sent me this picture from 1981 London:

Apparently the flower delivery person showed up in the middle of class and all the college girls were just in a romantic swoon that I’d done that for her 😎

Oh yeah let’s see the recipe for that Cranberry Tart.

Memories of 22 years ago today when I sent a recipe for Cranberry Upside Down cake to my Dad. It was the last recipe I sent to him. I didn’t know that 14 days later he would cross the rainbow bridge due to cancer of the platelets.

Dad said it was wonderful.

For the Topping:
¾ cup firmly packed brown sugar
¼ cup unsalted butter
¾ pound fresh cranberries

For the Cake:
1 ½ cups Swans Down Cake Flour
2 teaspoons baking powder
¼ teaspoon salt
1 cup white sugar
½ cup unsalted butter, at room temperature
2 eggs, separated, divided
1 teaspoon vanilla extract
½ cup whole milk

For the Whipped Cream (Optional):
1 cup heavy cream
¼ teaspoon vanilla extract
1 tablespoon confectioners’ sugar
⅛ teaspoon cream of tartar

Preheat the oven to 350 degrees F (175 degrees C). Butter a 9-inch round cake pan.

Place brown sugar and butter into the prepared pan and place the pan over medium heat. Heat, stirring occasionally, until butter is melted and sugar has dissolved, 3 to 5 minutes. Scatter cranberries over the butter-sugar mixture. Set aside.

Mix flour, baking powder, and salt together in a bowl.

Beat white sugar and butter together in another bowl using an electric mixer on medium-high speed until light and fluffy, 2 to 3 minutes. Add egg yolks, 1 at a time, beating well after each addition. Add vanilla extract and mix well. Fold in the flour mixture in 3 additions using a silicone or rubber spatula, alternating with milk.

Beat egg whites in another bowl using a whisk or an electric mixer until soft peaks form. Add cream of tartar and continue to beat until stiff peaks form. Fold whites into the batter using a spatula. Spoon batter over the cranberries in the cake pan, spreading evenly.

Bake in the preheated oven until a toothpick or skewer inserted into the center of the cake comes out clean, 55 to 60 minutes. Transfer the pan to a wire rack and let cool for 15 minutes. Run a knife around the edges of the pan to loosen the cake. Invert onto a serving plate, let stand for 5 minutes, then lift off pan.

Whip heavy cream in a bowl using a whisk or an electric mixer until soft peaks form. Stir in confectioners’ sugar and vanilla extract.

Cut the cooled cake into wedges and top with whipped cream.

Looking at that cake pic just brings back bittersweet memories because Dad didn’t tell me he was terminally ill. He didn’t want me to get upset…

I’m going to do either a key lime pie or a chocolate haupia pie in the Taint Week between Xmas and NYE. Can’t make up my mind, I love them both. But for sure: i will make the crust from scratch with fresh coconut and mac nuts. I think I should do key lime because I think chocaupia shouldn’t have a complex crust competing with the coconut and chocolate.

When I was a youngin’ my parents didn’t wrap the presents that were under the tree on christmas morning. They were just spread around the tree. Only wrapped ones on Xmas eve when family would come and bring presents.

Merry to all who celebrate, and hugs for the Lizards who are coping with less than merry this season.

Lucky enough to have a good holiday here. The presents are open, the Christmas breakfast of ham omelets concocted by our extra kid have been consumed. Sitting back now to watch my grown boys play one of their new video games. The just-moved-out son came home for Christmas Eve, but will go across town soon to join his girlfriend/roommate at her family’s house for dinner. There’s a picturesque inch of snow on the lawns and roofs but the streets are dry. Counting blessings while I sip my coffee. Catching my breath.

One of my favorite pictures from this year, from the ‘why didn’t I think of that?’ file: my great-niece with her very own Christmas tree. Her mom says she likes this one so much she’s left the real tree alone.

Been on a baked beans kick for a minute. Exploring Mexican and Indian spice profiles, mixing beans, lentils, and quinoa. Today I’m getting fancy:

Pinto and black beans with Mexican spice profile.
Toasted my quinoa before cooking with beef stock.
Roasted eggplant medallions, will mix in at the end.
Onion and garlic. Will introduce honey the last 3 hours, and a little on top last hr.
Chickpeas: roasted till crunchy, will be garnish on top.

So…my first try at making borscht and I went with a green borscht because we have a couple of large bunches of sorrel growing in front of our house. It did not suck. Our friend’s daughter - who is never complimentary - said it was her third favorite soup of 2023 and asked for a second bowl. She ate that too then came back and said it was the second best soup she’d had in 2023.
