Got the Tandori lamb shanks in the big green egg this morning. I’m trying a new technique of indirect cooking over a pan of water with garlic, ginger and herbs. I’m thinking about adding some peppers. Should be ready in about 12 hours.

I’ll be there. Do we need a side dish or some liquor?
