I gave up on digital cameras a few years for talking pictures of instruments because they alter the color too much. It’s very important for me to have accurate color. Have cameras gotten significantly better in the past few years?

Yes. With built in color correction, gamma and white point settings plus the color tools available in even PS Elements ($70 consumer version of PS). Or you can really go nuts and get a color calibrated monitor and tools so you can match color between screen and output. You can now get dye sublimation printers (the best for color and gradients) for under a $1000.
