I’m just using coals. Since the cooking time is so long I think wood would add too much smokey flavor over time. If the fire starts to die down I’ll throw on some pear wood.

I agree that too much smoke would really interfere with the tandoori spices.
Sounds really nice though.
12 hrs of low and slow those babies ought to be pretty tender
