I also shoot instruments against a solid back background and all the digital cameras I’ve used in the past have a problem with that. The tend to add “noise” to the background.

Most digital cameras now let you play with the white balance, which helps get the colors as accurate as possible. If you get a reasonably good camera, color reproduction is usually very good.

The noise you’re talking about sounds like JPEG artifacts. You can avoid a lot of that by setting the camera to its highest quality setting for JPEGs, and you can wipe out the noise entirely by using the camera’s RAW, uncompressed format.
