Indonesian cuisine seems to have some overlap with Indian too (and a place like, say, Bali has even more)— although it reminded me of Philippine food more than that.

I imagine Philippine has some intersect with Spanish due to the colonization. What I want to try one of these days is Nepalese or Tibetan. They probably have some very good vegetarian dishes.
