If you can catch Alton Brown’s (Good Eats!) segment on ice cream, he says the same. Do you watch him? I think they have the segments on that site.

Yeah I like his cooking advice alot. Love that it’s based in scientific fundamentals so you learn the why behind the hows. He can be kind of annoying, but I guess that’s the price you pay. I also really enjoy Cook’s Illustrated magazine, they take the same approach as he does to all their recipes. You can buy an online subscription to their website for less than $40 a year, and it gives you full access to their complete archives. Recipes, product reviews, taste tests of store brands, and technique tips. Highly, highly recommended.
