If there are Cajuns involved I would think that smoke might be expected.

(My business partner in the hot sauce scheme is a displaced Louisianian. I’m beginning to think they’re wired to put hot sauce/chile peppers on something; if it runs, chase it down and eat it, if it doesn’t run, consider eatting it anyways.)
