a certain kind of ironic provincialism in many comments I see in places like quora when it comes to an understanding of, for instance, biscuits and gravy. The Brits just can’t seem to wrap their heads around the idea that our biscuits (South Carolina) are not their biscuits, and our gravy is not their gravy. This shit is taking 20 years off our lives on average, and has led to us having more dialysis centers than payday lenders, so you know it’s good when we know that and keep eating it. Also grits. Just shut up if you are a northerner and think you understand grits. No you don’t. You smartasses, trying to cook instant grits in your little saucepan, and then bitching “why would anybody eat this?” Have you eaten cheese grits, made by the 90 year-old woman who’s been making them for 150 years in the meat-and-three in one of the ubiquitous brick buildings that’s been standing in every southern town since reconstruction? No? Then you have NOT eaten grits.
