I imagine Philippine has some intersect with Spanish due to the colonization. What I want to try one of these days is Nepalese or Tibetan. They probably have some very good vegetarian dishes.

There are both in the bay area (foodie heaven…), but Tibetan, at least, doesn’t have much in the way of vegetarian cuisine. Yes, they’re Buddhists, but they can’t grow vegetables in that climate, so there aren’t many vegetarians. There’s a Himalayan restaurant in my area that has vegetarian cuisine, but it’s very like Indian — which is a good place to go for veggies, by the way.
