We will have to wait to see what actually happened. Some guest on CNN made a comparison that I had been thinking about — Nashville to Las Vegas — Warner to Paddock. We never learned what led Paddock to commit his massacre; and maybe we will never learn what prompted this action either. Trump’s mission to burn everything down on his way out make this seem more like an act that is part of his destructive path to destroy our nation.

Skip the marinating - that can make the seafood rubbery. Go straight to using herbs and spices on the seafood as it cooks. Turmeric, paprika, saffron, garlic (you can never have enough), and the seafood liquid will help flavor the rice for good measure.

Lobster is my favorite. I can eat it plain, with butter, you name it.

I just put up the leftovers and the seafood tastes much better. I kinda overseasoned the rice (which is how I like stuff, really spiced up, lots of garlic & smoked paprika mashed with parsley, and a reasonable amount of saffron.

I also made my own stock from the shells, with carrots, green onions (I didn’t have leeks), fennel and garlic with whole peppercorns and let it cool on low for 5 hours.

Overall, I’d have given it a 6 cooked as it was. An 8 now that the flavors have melded.

Last night I mentioned we have family members (hubby’s and by extension my cousin) with covid. Youngish couple (early 30s), he’s a nurse, she’s full time mom to two boys, almost 1 and a just turned 7 yr old. He’s a nurse and they had been taking all the professional precautions and he still ended up with a mild case and so did our cousin. Also too, they live in Central Florida.

Today both boys tested positive. Fuck. They haven’t given it to anyone, everyone that was in their family bubble outside the house(our aunt and uncle, another cousin and that has been it) has had no symptoms since they went into quarantine as soon as they found out, which was maybe a little over a week ago maybe a bit longer. I just found out last night. The 7 year old was a preemie, and has some pretty serious immune system issues and asthma. So far he’s ok, so maybe that will continue. The little dude seems ok too, for now according to our Aunt. I reallllly don’t want any of these people to die, they are good people with big hearts, trying to slog with kids through this madness and have been following all the medical protocol. With no help or breaks. Damn it. 😢
